AIM: The aim of the Cooking for Dysphagia & Modified Textured Diets programme is to enable the learner to develop knowledge, skills and competence to prepare food for patients suffering with Dysphagia.

OBJECTIVE: On completion of this programme, it is expected that learners will be able to:

    • Know what is meant by Dysphagia and its implications for food preparation
    • Understand how to prepare food for those suffering from Dysphagia
    • Be aware of the importance of communicating with appropriate health professionals in relation to Dysphagia.
    • Be able to apply appropriate texture descriptors
